Pinot Noir (Pinot Nero or Blauburgunder) is one of the most cherished and most demanding of all red wines. It cannot grow everywhere, however, and is very demanding in terms of vineyard and vinification alike.
This Pinot Noir develops to its full potential at the cool yet sunnny vineyard sites of Appiano and Caldaro, yielding a structured wine with elegant fullness that is strikingly similar to the Burgundian paragons.

The Hedonist Ecology Shiraz

The fruit for the Hedonist Ecology Shiraz is sourced from our Willunga foothills estate vineyard & an iconic vineyard from Kangarilla, a relatively cooler site within McLaren Vale, approximately 50/50.

The 2021 season experienced magnificent ripening conditions from fruit set and flowering. While vintage was long and drawn out, it created a relaxed picking environment and enabled superb balance of natural acidity, texture and tannin in the resulting wines.

The Hedonist Shiraz

The fruit for the Hedonist Shiraz is predominately estate grown on our organic/biodynamic certified vineyard situated in the Willunga foothills, McLaren Vale. Fruit is also sourced from the Sellicks Foothills, Blewitt Springs and Kangarilla, all from vastly different soil profiles and aspects across the district. The idyllic St Vincent’s Gulf with it’s cooling sea breeze lies just to the West of the valley.

A very dry winter and spring, coupled with record heat and dry conditions throughout summer led to an early and condensed vintage. The conditions lent themselves to smaller berries with good concentration of flavour.

Val d’Oca Prosecco Blu Millesimato Extra Dry “Kosher”

The Cantina Produttori di Valdobbiadene Val D’Oca is one of the leading producers of Prosecco, the most famous Italian sparkling wine made with Glera grape, cultivated and vinified in the hills of Valdobbiadene, the birthplace of Valdobbiadene Prosecco Superiore DOCG. However Val d’Oca also produce Prosecco DOC coming from lands in the province of Treviso in a beautiful setting amid rolling hills between Asolo and Conegliano.

Prosecco Blu Millesimato is a terrific sparkling wine with an elegant floral bouquet and a magnificent mousse. Enjoyed chilled, it has the perfect balance between acidity and softness.

This sparkling wine is produced following the Kosher methodology.

Each transfer of the must/wine from one tank to another is carried out in the company, under the supervision of a Rabbi and by observant Jews who carry out all the operations on the indications of the cellar technician. Any procedures performed by others would compromise the entire production tank.
Kosher wine does not require particular processing or aging but is simply supervised during its formation, to avoid contact with substances considered impure.
All systems are washed with boiling water before being used, the filters, if they are made of cellulose, must not contain cereal derivatives (such as starch for example). After being filtered, the must is brought to 85°C for a few seconds and finally the bottling plant is prepared according to Jewish standards: it too is sterilised.

Viberti La Gemella Barbera d’Alba DOC

Last born in the Viberti house, her name is a dedication to Maria (twin by birth), wife of Giovanni Viberti, a woman of humble origins who made a fundamental contribution to the growth of the company and her family. Cook for over 50 years of the family inn, alias Buon Padre, tenacious and severe mother, and great passionate of Barbera, in 2004 observed how many of the most beautiful vineyards of Barbera had been substituted with the variety Nebbiolo, more profitable grape than the same Barbera considered for years the “wine of the poor”, thanks to a marked acidity and a difficult drinkability. The project stems from the intuition of Claudio, the youngest and newest son in the management of the family business, The plant of a new vineyard with a higher plant density is born. The goal, then achieved over time is a wine with a great concentration, a particular amiability and a nose with a clear and intense red fruit. The acidity that accompanies the concentration makes the wine extremely elegant and fascinating.

The story of the Viberti winery begins when Cavalier Antonio Viberti buys the Locanda del Buon Padre. It was the year 1923 when Antonio began to produce wine for the guests of his Locanda in the basement of the Buon Padre.
