This sparkling wine is produced following the Kosher methodology.
Each transfer of the must/wine from one tank to another is carried out in the company, under the supervision of a Rabbi and by observant Jews who carry out all the operations on the indications of the cellar technician. Any procedures performed by others would compromise the entire production tank. Kosher wine does not require particular processing or aging but is simply supervised during its formation, to avoid contact with substances considered impure. All systems are washed with boiling water before being used, the filters, if they are made of cellulose, must not contain cereal derivatives (such as starch for example). After being filtered, the must is brought to 85°C for a few seconds and finally the bottling plant is prepared according to Jewish standards: it too is sterilised.

This nice Prosecco Rosè is obtained from the separate vinification with soft pressing of the Glera and Pinot Noir grapes, from the subsequent static decantation and fermentation at 18 ° C with yeasts selected for glera and finally from the maceration in red for Pinot Noir. The blend of the rosé base is created before the second fermentation in an autoclave with the charmat method (60 days).

This wine is only made with Nebbiolo grapes from the single vineyard Bricco delle Viole, planted in 1964. Produced from vineyards with more western exposures, it makes a maceration that does not exceed 12-15 days on the skins. Aged in tini for 46 months, the wine is transferred into stainless steel tanks for an additional 3 months to stabilize before bottling. It is cellared for 12 months prior to release.
