AGEING
Maturation in tonneaux and part in large casks for 36 months. Ageing in bottle for 24 months before release.

PAIRING
It goes well with the traditional braised meats, game, grilled meat through to raw fish and shellfish: try it with BBQ duck or swordfish tartare. In oriental cuisine, it is ideal with lacquered pork and Peking duck.
