NOSE
Hints of flower blossom, lily and exciting empyreumatic notes.
PALATE
Frank attack, well-balanced and fresh with candied citrus aromas in the aftertaste.
AGEING
Fermentation with indigenous yeasts, mostly in big wooden barrels and partly in wooden casks.
Aged on lees for 10 months.
PAIRING
Recommended with scallop carpaccio with lime, espelette pepper, cucumber & avocado sorbet.
