History tells us that the origin of the Château Maltus goes back to the Middle Ages, in the time of the crusades.
The Order of Malta, well implanted on the land named Lalande de Pomerol, cultivated vines for the first time on the grounds of the Château Maltus.
Nicolas Lassagne acquired this parcel in 2015 of sixty-year-old vines with the purpose of producing this richly dense wine.
Ambre de Maltus is a very high-quality white wine worthy of the greatest Bordeaux white wines. A special attention is paid to the vineyard, as well as to the cellar to produce this cuvée. The alcoholic fermentation happens in French oak barrels, as well as a daily stirring during its ageing.
The origin of the estate is very ancient. Vines have been grown on the slopes of what is now Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1er Grand Cru Classé “A”, boasts one of the finest terroirs in Saint-Émilion. Château Pavie is renowned for the structure and elegance of its wines.
Starting with the 2005 vintage, Château Pavie officially announces the release of a second-label wine under the name of “Arômes de Pavie” which replaces “Château Tour Simard ” because it would be easier for our consumers to recognize this wine among Perse’s range. Principally from young vines that are less than ten years old, the final blend also contains numerous barrels that were remaining following the severe selection that is practiced for the first wine. The same care and attention goes into the production of this wine as to Pavie itself.
The 2015 vintage in Saint-Émilion stands out for exceptional weather conditions. Arômes de Pavie 2015 is vinified in the estate’s 20 temperature-controlled wooden vats. After alcoholic fermentation and controlled maceration, the wine is aged in French oak barrels, depending on the vintages in 70% to 100% new oak, for 18 – 32 months. This method allows the oak notes to integrate harmoniously with the wine’s tannic structure.
Arthus d’Olivey lived at Château Olivier in the 16th century and gave it his name. He transformed the medieval building into a veritable fortress with four towers and a moat. It was during his time that the first vines were planted (1515).
