The grapes of this Sauvignon are harvested at optimum ripeness. First juice from traditional pressing, settling by cold stabilization, during fermentation, with the addition of 10% of filtered must to bring structure and power to the wine.
In the Egrots, a small hamlet in the commune of Sury-en-Vaux, 4 kilometers from Sancerre, Michel and Laurent Thomas operate a family estate comprising 17 hectares of vineyards, on 3 different types of terroirs: limestone and stony soil giving fine and fruity wines; clay and shellfish soils giving a wine with intense aromas of almonds and citrus; and sedimentary rock very hard siliceous, giving smoked aromas.
The production is harvested, vinified and bottled by them at the property.

Queue de Corue (or “Tail of Cod”) comes from the name of the plot given internally for years. It evokes a plot in a triangle and slightly sloping and therefore more difficult to work. It is a gabbro terroir which brings freshness and salinity. However, the very sunny vintage and the harvest date bring this wine to notes of yellow fruits. This is usually the last plot harvested of the vintage.
