Cetonaia Amarone della Valpolicella DOCG

Cetonaia Amarone is crafted from a careful and rigorous selection of grapes, which are left to wither according to ancient tradition. Its dry, pleasantly bitter flavor, distinctive aroma, and garnet hue are the result of a long aging process.

Following the rigorous traditions of the region, the grapes for the Cetonaia are meticulously hand-harvested in the autumn. They are then transferred to special drying rooms (fruttai) where they rest on trays for over 100 days throughout the winter. During this historical appassimento process, the grapes lose around 40% of their water weight, naturally concentrating the sugars, polyphenols, and aromatic compounds. The dried grapes undergo a slow, cold winter fermentation followed by extensive maturation in oak barrels to develop the wine’s signature complex, velvety character.
