					<description><![CDATA[At the beginning of the XX century, the HEPP family were travelling fruit distillers, working from orchard to orchard around Uberach village. In 1972, Rene Hepp and his son Thracis established their own distillery and started to sell their eaux de vie which are today still exclusively distilled from Uberach vicinity fruits.

Now, working with three 400-litre Carl stills, Yannick Hepp follows in his forebears’ footsteps to craft completely natural fruit eaux-de-vie of impeccable technical mastery. Concentrated and precise, they bring back fine flavours all too often forgotten. His range — artisanal, pared down to the essentials — is thoroughly contemporary.

<p><strong>TASTING NOTES</strong><br />
Translucent, brilliant appearance with crystalline highlights.<br />
On the nose, softness and suppleness in its fruity notes. Aromas of mirabelle plum, yellow fruit and peach skin, layered with an almond note typical of stone fruits.<br />
On the palate, that same elegance, full and unctuous, over intense notes of very ripe, compote-like mirabelle, with a honeyed flavour of great finesse. The finish is long, carrying a delicate kernel (stonefruit) note.</p>
<p><strong>DISTILLATION</strong><br />
Natural fermentation of Mirabelle plums.<br />
13 to 16 kg of fruit per litre of alcohol.<br />
Distilled in a 400-litre Carl pot still.<br />
Matured for 1 year in stainless-steel tanks.</p>

Best enjoyed over a good meal &#8211; after the vol-auvent and the baeckeoffe, but before the apple strudel!</p>

<p><strong>TASTING NOTES</strong><br />
Clear, shimmering pale gold with bright straw-yellow highlights.<br />
Remarkably elegant nose, highly precise, and singular. It opens with prominent notes of stewed plums and rich prune paste, which gives way to sweeter, complex aroma of acacia honey, vine peaches, vanilla, and a very light touch of white oak wood.<br />
Potent, rich, and full-bodied palate with a pleasantly heavy, oily mouthfeel.</p>
<p><strong>DISTILLATION</strong><br />
‘Home-made’ continuous distillation, plum varietial by plum varietal. The mash is fermented for 6 to 7 weeks and then aged separately in oak barrels for 6 to 12 months before the final blend.</p>
<p><strong>PAIRING</strong><br />
A brilliant partner for both sweet (glazed ham or vanilla icecream) and savory dishes (pan-seared foie gras or blue cheese).</p>

Structurally taut, sweet, and moderately oily. It delivers an incredibly seductive, round, mouthfeel packed with flavors of nougat, marzipan, gingerbread, and vanilla.</p>

					<description><![CDATA[La Maison Cattier is located in Chigny-les-Roses, an exceptional terroir classified as Premier Cru in the heart of Champagne, between Reims and Epernay. The Cattier family has owned vineyards since 1763, but it wasn't until 1918 that Champagne Cattier was launched.
Since then, the Cattier House, still independent and family-owned, perpetuates its age-old know-how in the greatest respect of the environment to elaborate its champagnes with a generous and fruity style.

Made from twenty different Crus, the Brut Icône Cattier is produced primarily using pinot grapes. The perfect combination of power and finesse, it owes its complexity to these pinot varieties and from the older wine added to the blend. The result is a generous champagne, brimming with vitality.

Full, fresh flavours of grapefruit, lemon and ginger dominate the palate, paving the way for more delicate notes of cherry, pear, mirabelle and apricot. The fresh tartness continues all the way through to the long, strong finish.</p>
