It exhibits a refined bouquet with subtle layers of nettle, red capsicum and tropical pineapple aromas.</p>
<p><strong>PALATE</strong><br />
Concentrated and textural with stonefruit, zesty citrus, blackcurrant leaf, supported by subtle French oak. Bright, pure and long finish with refined minerality. A vibrant yet layered Single Vineyard Sauvignon Blanc with lifted aromatics and understated oak complexity.</p>
<p><strong>AGEING</strong><br />
30% percent of the blend undergoes a ‘wild’ ferment in 500 litre French oak puncheons, with the remaining 70% fermented at low temperatures in stainless steel.</p>
<p><strong>PAIRING</strong><br />
Its textured, creamy mouthfeel makes it highly food-friendly. It pairs excellently with versatile seafood dishes, creamy soft cheeses, or poultry.</p>

This fruit-driven Pinot Gris displays bright aromas of crisp pear, juicy ripe citrus and notes of ginger.</p>
<p><strong>PALATE</strong><br />
On the palate this wine displays fresh apple, quince, and subtle hints of sweet baking spice. Full-bodied yet bright on the palate, this is a fresh and richly textured wine with a long and lingering finish.</p>
<p><strong>AGEING</strong><br />
Post-ferment the wine is held in tank and matured for a short period of time before being stabilized and prepared for bottling.</p>
<p><strong>PAIRING</strong><br />
Chilli, ginger and battered fish soft tacos with fresh coriander and salsa verde.</p>

<p><strong>APPEARANCE</strong><br />
A bright ruby hue in the glass.</p>
<p><strong>NOSE</strong><br />
The nose displays aromatic layers of cherry, plum and bright red fruit notes with hints of wild thyme.</p>
<p><strong>PALATE</strong><br />
The palate is smoothly textured with flavour of red and dark fruit, spice and French oak, underpinned by nuances of dry herbs and savoury notes.<br />
Mid-weight on the palate, it is balanced with refined silky tannins that lead to a long and elegant finish.</p>
<p><strong>AGEING</strong><br />
Once the final blend was made, the wine is left to develop for a few months in oak.</p>
<p><strong>PAIRING</strong><br />
Dishes with a touch of spice or Portobello mushrooms, bacon on sourdough bruschetta with roasted garlic and drizzled truffle oil.</p>
