Panchito was the birthday gift for the owner's niece Isabel. The children in the family love having animals and Pancho arrived to steal everyone’s heart. This kid goat quickly became part of the farm along with the sheep, Olivia The Little Cow, and The Donkey. Panchito is like a child and follows his caretaker Julio everywhere.

La Vaquita is a clarete inspired by Olivia, a calf gifted to the owner's niece Helena for her birthday. It is a wine crafted under the clarete method, arising from the fermentation of red and white grapes, the latter in smaller proportion. Composed of 80% Malbec and 20% Torrontés, it is a wine with a light color and a strong aromatic impact reminiscent of red fruits, with floral notes characteristic of Torrontés.

The Donkey was an animal that Miguel, the owner's brother, used to play with when they were kids. The winemakers had already prepared a natural wine to launch to the market. And it all happened very organically. Emiliano Pierro, the artist, exhibited in the art cellar and one of his paintings was a donkey. The family fell in love with Emiliano’s style and they decided that the wine had to tell that story.

This wine was inspired by a baby sheep that the owner's children raised during the pandemic on the Maipú farm, they named her Juanita and today she lives with the rest of the animals on the farm.

Classic fermentation with indigenous yeasts and maceration for 15 days.</p>

The wine&#8217;s dry, aromatic profile makes it an ideal match for spicy Asian cuisine, such as Thai green curry or spicy noodles; grilled shrimp with coconut milk; fresh salads or as a refreshing standalone aperitif.</p>

					<description><![CDATA[Nosotros line celebrates the efforts of all the people who work day by day to make this wine and it is considered the winery’s “selection of selections”.

This wine celebrates our story of courage, which began 25 years ago with the dream of the founder, Susana Balbo, the first female winemaker in Argentina. A second dream came true in 2012 when her two children, José and Ana, joined the family business.

The Nosotros Library Edition Cabernet Sauvignon 2012 from Valle de Uco is a wine that stood out in that vintage and was stored in the family cellar. Today, we celebrate the 25 years with this grape variety, which we see as one of Argentina's hidden gems, as well as Susana's favorite variety.

Very intense color, deep hues with violet and dark red tones.</p>
<p><strong>NOSE</strong><br />
Aromas of black fruits combined with spicy, herbal and floral notes.</p>
<p><strong>PALATE</strong><br />
In the mouth, this is an outstanding and powerful wine at all times, with silky tannins and a lingering finish.</p>
<p><strong>AGEING</strong><br />
Each varietal is individually elaborated and aged in French oak barrels for 12 months. (Malbec, Cabernet and Merlot in 50% new French oak, while Cabernet Franc in 60% first use and 40% second use French oak).</p>
<p><strong>PAIRING</strong><br />
This wine is ideal with roasted calf&#8217;s liver with apples, onions, and balsamic vinegar sauce, ossobuco, or stuffed peppers.</p>

Complex aromas of red fruits and flowers, where the typical notes of violets of the variety stand out.</p>

In the mouth, you can taste sophisticated tannins, with a remarkable personality. Long and extremely pleasant ending.</p>
<p><strong>AGEING</strong><br />
The wine was aged in 50% new French oak barrels (25% of first use and 25% of second use) for a period of 12 months and then kept in bottles for 8 more months.</p>
