TECHNICAL DATA
Alcohol 14.5%

APPEARANCE
Saturated, opaque purple-black color.

NOSE
Exuberant bouquet of crème de cassis, blueberry compote, crushed limestone, white truffles, licorice, and toasted, charred wood.

PALATE
Massive fruit power and rich, sculptural tannins. It seamlessly balances a bold, voluptuous body with a mineral-driven and
chalky tension. The finish is formidably long, tasting of anise, dark chocolate, and black tea.

AGEING
Matured for 18–24 months in 80% new French oak barrels.

PAIRING
This 2015 requires rich, savory foods with high fat and protein to soften its intense tannins: smoked ribs, pan-seared duck breast, or grilled Portobello mushrooms.

The origin of the estate is very ancient. Vines have been grown on the slopes of what is now Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1er Grand Cru Classé “A”, boasts one of the finest terroirs in Saint-Émilion. Château Pavie is renowned for the structure and elegance of its wines.

Starting with the 2005 vintage, Château Pavie officially announces the release of a second-label wine under the name of "Arômes de Pavie” which replaces "Château Tour Simard ” because it would be easier for the consumers to recognize this wine among Perse's range. Principally from young vines that are less than ten years old, the final blend also contains numerous barrels that were remaining following the severe selection that is practiced for the first wine. The same care and attention go into the production of this wine as to Pavie itself.

The 2015 vintage in Saint-Émilion stands out for exceptional weather conditions. Arômes de Pavie 2015 is vinified in the estate’s 20 temperature-controlled wooden vats. After alcoholic fermentation and controlled maceration, the wine is aged in French oak barrels, depending on the vintages in 70% to 100% new oak, for 18 - 32 months. This method allows the oak notes to integrate harmoniously with the wine’s tannic structure.

Alcohol 14.5%

APPEARANCE
Deep garnet-purple with dark highlights.

NOSE
After aeration, notes of ripe dark fruits emerge, with nuances of warm plums, cherry compote and blackberry tart. A touch of dried lavender completes the bouquet, while notes of cedar, sandalwood, toasted walnut and roasted coffee add complexity.

PALATE
This wine offers a medium- to full-bodied profile with firm, polished tannins. Dark fruits dominate the palate, supported by a pronounced minerality that brings freshness.

AGEING
The wine is aged, depending on the vintages in 70% to 100% new oak, for 18 – 32 months.

PAIRING
Arômes de Pavie 2015 pairs perfectly with roasted or grilled red meats. It also matches very well with full-flavored hard cheeses.
